中ウメ'白加賀'果実を梅漬け用として種々の段階で収穫し, 収穫後の追熟に伴う成分変化を調べた。(1) 生育後期に収穫された果実では収穫時にもエチレン生成がみられ, その生成量は収穫時期が遅いものほど大きくなった。早期に収穫されたものでも貯蔵するとエチレン生成が起こった。貯蔵中のエチレン生成の増大は収穫時期が遅くなるほど急速であった。(2) 貯蔵中にクロロフィル含量と硬度はエチレン生成量が急増した時に顕著に低下した。(3) 生育に伴ってクエン酸は直線的に増加, リンゴ酸は減少し続けた。貯蔵中もある程度まで同様の変化がみられた。(4) 貯蔵中に遊離アミノ酸ではアラニン, セリン, プロリン, バリン, イソロイシンおよびロイシンが増加し, 特にアラニンは収穫時の4.814.5倍まで増加した。(5) 貯蔵中にグルコースとソルビトールは激減, スクロースとフラクトースは減少後やや増加傾向を示した。
