Now-a-days, consumer food choices are driven by health awareness and sustainability concerns. As vegetable oil is an important component of human diet, the source and the processing play an important role in consumer acceptability. The crude vegetable oil needs to be refined to remove impurities that affect color, palatability, stability and safety of oil. The several stages such as, degumming, neutralization and deodorization were involved in the refining of oil. This review highlights process and steps used in vegetable oil refining. It also discusses the prospect of using the refining by-product stream for obtaining high value products like phosphatidylcholine, tocopherols, and tocotrienols.
