The aim of the present study was to compare the physiochemical and techno-functional properties of extracted acorn starches from the two Tunisian species; Quercus ilex. L  and Quercus suber. L . The X-ray diffraction analysis was also performed on the two starches. The starch yield of Quercus suber. L (497c8CDCHLcRr3k3Qo6b1hNHB8ySdfnSwMBKfnhcNviT6GUftPy4uoNhDfPmkqAV4E2eGXa5eRNLoZnc4xkxbmij7PfENwdhigher purity represented by low protein and ash contents. The swelling power and water absorption at 90°C ranged from 20.76 to 21.51 (g water/g starch) and 10.1 to 15 (g water/g starch), respectively. However, the higher solubility value (64.22%) was observed for starch extracted from Quercus ilex. L (64.22%). Both extracted acorn starches were characterized by an A and B-type diffraction pattern. These results highlighted the possibility of using the extracted Quercus starches for the development of functional products in food industries.
