Electron spin resonance (ESR) spectra of 5-doxylstearic acid (5 NS) was observed in a water-in-oil emulsion stabilized by 3-isooctadecyloxy-1, 2-propanediol (GE) and in liquid crystals (LC) of GE to clarify the stabilizing mechanism of the emulsion. With increasing water content, stability increased. The ESR spectra indicated that the order parameter increased following a decrease. After adding inorganic salts, stability and the order parameter increased. The mobility of 5 NS in the emulsion was essentially the same as that of 5 NS in LC. The stabilization of the emulsion is thus shown due to LC in the emulsion and ESR analysis is useful for assessing the mobility of GE in an emulsion.
