酒造用日本型水稲3品種:日本晴(1984,1985,1986年度産),むさしこがね,およびニホソマサリ(1985,1986年度産)を埼玉県水田で栽培した.これらの75%白米より胚乳澱粉を調製し,2,3の特性を調べた。環境温度が低い状態で生育したイネの胚乳澱粉は高い状態で生育したものの澱粉よりもアミロース含量が高かった.また,低温で育ったイネの澱粉は高温で育ったものの澱粉よりDSCによる糊化温度は低く,糊化熱は小さかった.
