Recently many saccharides with physiological functions were developed. These saccharides were oligosaccharides used instead of sugar. It is well known that dietary fiber also has the same physiological functions as oligosaccharides. Anti-dental caries, anti-blood glucose elevation, anti-blood insulin elevation and utilization by Bi fidobacterium of oligosaccharides were described. The physiological functions of short chain fatty acids which were produced through fermentation in large intestine were also described.
