緒 言 科学技術庁資 源調査会 は,平 成4年11.月 に 日本食 品食 物繊維成分 表(以 下,食 物繊 維成分表 と略 す)1)を公 表 した。 この成分 表は,食 品及び食物繊維 の供給源 として重要 な214食 品について,食 物繊維含有量 を水溶性 (SDF)と 不 溶性(IDF)に 分け,両 者 を合計 した値 を総食物繊維(TDF)と し,ま たSDFとIDFに 分けに くい藻類 な ど13食 品についてはTDFの み を収載 してい る。収載食品数は四訂 日本食品標準成分表(以 下,四 訂成分表 と 略す)2)に比べ,穀 類30%,い も及びで ん粉類26%,種 実類29%,豆 類44%,野 菜類34%,果 実類20%, きの こ類42%,藻 類27%,し 好飲料類3%,調 味料及 び香辛料類2%に す ぎず,従 って,食 物繊維成分表 は 献立作成及 び栄養指導す る際に,四 訂成分表 と同様 には活用で きに くい。そ こで,本 報で は,献 立作成,栄 養 指導及 び食物繊維摂取 目標量策定の一助 になると考 え,食 品群別の食物繊維含有量の特徴 と,四 訂成分表の粗 繊維量及 び水分量(食 物繊維成分表 と同値)と 食物繊維成分表成分 との関係 を算 出 し,食 物繊維成分表未収載 食品の食物繊維含量 を推定 し得 るか否か を検討 した。
