慢性便秘患者9人を対象に, 栄養指導前後に連続3日間の食事調査を行い, 栄養素等摂取量, 排便状況を調査し, 便秘患者の栄養素等摂取の特徴を検討した。更に, 3年後に8人の追跡調査を実施し, 食事療法の継続の有効性についても検討をした。結果は以下のとおりである。1) 栄養指導以前の栄養素等摂取量は, すべての栄養素で充足率を満たしていなかった。特にカルシウム, 鉄, 食物繊維は371mg, 7.3mg, 10.5gと低い摂取量だった。2) 指導2週間後の栄養素等摂取量は, すべての栄養素で119.5194.5%と増加した。指導前後の充足率を比べると, ビタミンAを除く他のすべての栄養素で有意に増加した。3) 指導2週間後の総食物摂取量は, 928.6g/日から1,145.2g/日に増加し, 1日の食品数も17.8から23.6に増加した。4) 指導2週間後の排便の回数, 便の性状, 投薬も改善が認められた。5) 3年後の調査では, 食事療法の継続の有無と便秘の間に有意な相関が認められた。
