ミネラル摂取量について, 陰膳法による実測値と秤量法による計算値との関係を把握するため, 58人の食生活改善推進員を対象に, Ca, Mg, Fe, Zn, Cu, Na, K摂取量を調査し, 以下の結果を得た。1) Ca摂取量は, 485±222mg/日, Mg摂取量は196±52mg/日, Fe摂取量は6.2±2.3mg/日, Zn摂取量は7.0±16mg/日, Cu摂取量は1.04±0.29mg/日, Na摂取量は3.24±0.88g/日, K摂取量は2.03±0.63g/日であった。2) 食品群別寄与率が最も高いのは, Caが“乳類”, Mgが“穀類”, Feが“豆類”, Znが“穀類”, Cuが“穀類”, Naが“調味嗜好飲料”, Kが“その他の野菜”であった。3) 実測値と計算値を比較した場合, Ca, Mg, Fe, Cu, Na, Kについては計算値に対し実測値が有意に低くなったが, Znについては実測値が計算値より高くなった。4) 実測値と計算値との相関係数は, Caがr=0.64 (p<0.001), Mgがr=0.59 (p<0.001), Feがr=0.35 (p<0.01), Znがr=0.54 (p<0.001), Cuがr=0.60 (p<0.001), Naがr=0.50 (p<0.001), Kがr=0.58 (p<0.001) であり, いずれも正の相関を示した。
