Although beans occupy an important place in the diet of Brazilian people, its use by phenylketonurics is forbidden due to its high phenylalanine (Phe) content, which exceeds the limit allowed by the Brazilian legislation (0.1g/100g). This study aimed at the preparation of beans with low-phenylalanine (Phe) content to be introduced into the diet of patients with phenylketonuria. Initially, the proteins were extracted and then hydrolysed by the action of several proteases.
