水稲成熱過程における籾中のビタミンB2と糖質の消長関係をフタケトリおよび愛国1号を用いて検討した。(1) 総B2は出穂後10日目ではフタケトリ, 愛国1号ともに籾中に多量に分布したが, そののち急激に減少し, それぞれ35, 33日目で一定値に達した。遊離型B2は出穂後10日目では両品種とも総B2の約90%を占めているが, その後減少し, それぞれ226, 223日日で約40%となつた。(2) 全糖は両品種ともほぼ出穂後30日目まで増加しその後一定値を示した。還元糖および非還元糖が全糖中で占める割合は20日日まで急激に減少するが, その後は漸減して約60日目で1%以下となり, そののちほとんど変動を示さなかつた。(3) デンプンと遊離型B2との間にはいちおう負の相関が存在するように思われるが, 他のものについては特に関係があるようには見られなかつた。
