逆相HPLC分析, 酵素分解などを行い, 米糠中のTG分子種の詳細な組成を検討するとともに, トウモロコシ, ダイズおよびヒマワリ種子中のTGの分子種的特性を調べた。1) 分析した米糠TGの主要な構成脂肪酸は, いずれもオレイン酸, リノール酸およびパルミチン酸で, 脂肪Table 7. Molecular species composition of triacylglycerols from corn, soybean and sunflower seeds (%). 酸組成には米の産地による地域的特性は見られなかった。2) 米糠TGは逆相HPLCにより少なくとも23の分子種群に分離され, そのうち主要なものはPOL (1722%), OOL (1417%), OLL (1317%), PLL (912%), POO (1012%) およびOOO (913%) であった。また, TGの総炭素数としては52と54のタイプが全体の90%以上を占めていた。3) OLLとPOLの分子種群では, 2位にはオレイン酸よりもリノール酸が多く分布しており, またOOL種では, 両脂肪酸の割合はほぼ1: 1であった。4) トウモロコシ, ダイズおよびヒマワリ種子中のTGではLLL, OLL, PLLおよびPOLが共通して多かったが, それらの相対割合はそれぞれ異なっていた。その他, トウモロコシではOOLが, またダイズではLLLnが比較的多く含まれていた。5) 産地の異なる8種の米糠 (北海道産5品種ならびに秋田産, 新潟産および高知産各1品種) と4種のダイズ種子 (いずれも北海道産) について比較検討したところ, TGの分子種組成には品種間で顕著な違いは認められなかった。
