Plants have a wider variety of polysaccharides and glycoconjugates than animals. Reflecting this, Arabidopsis has approximately 450 genes bearing glycosyltransferaselike sequences, while humans have around 250. However, the functions of most plant glycosyltransferase-like genes are unknown. It is likely that many are involved in the biosynthesis of cell wall polysaccharides, because the structures of cell wall polysaccharides are complex and diverse. For example, more than 50 glycosyltransferases may be required for pectin biosynthesis, assuming that one sugar linkage formation is catalyzed by one glycosyltransferase. Of the genes required for cell wall polysaccharide synthesis, only a few, including cellulose synthase (CesA), have been identified so far, using searches for genes with homology to bacterial genes involved in polysaccharide synthesis, or analysis of particular cell wall mutants.
