The Maciço de Baturité has a climate that favors the cultivation of several permanent crops, where the banana plantation is more prominent. Producers from that region, mostly produce in agroecological systems with few cultural treatments and systems as natural as possible, practically in extraction. Thus, this study aims to analyze the acceptance and sensory characteristics of Prata banana (Musa paradisiaca) produced in organic system and compare with Prata banana grown in conventional system. The research consisted in the evaluation of the acceptance and sensorial Characterization by CATA method of two samples of Prata banana (organic and conventional), in maturity stage grade 6 (fruit with full yellow skin), by 100 consumers. The adequacy level of the firmness and sweetness attributes was verified with the 7-points Just-about-right scale and the purchase intent was evaluated with 5-points FACT scale. The BPO sample presented pulp firmness stronger than ideal, while the BPC sample was ideal. Their sweetness was weaker than ideal. The sensory characteristics of the samples were similar. However, the acceptance and purchase intent of the samples was similar, with averages greater than 4 ("liked" and "probably would purchase" respectively). Therefore, although consumers perceive some distinctions in sensory characteristics, Prata banana fruits produced in the organic system have the same sensory acceptance as those produced in the conventional system.
