わが国において消 費 され る食用氷菓子類は アイス クリ ーム,ア イス シャーベ ッ ト,ア イスキ ャンデーおよび氷 水な どがあ り,と くに夏季に多 く消費 され る.こ の うち アイスク リー ムに関す る昭和32年 以降 の統 計を示す と第 1表 の通 りであ る. 本表 よ り昭和39年 を境 に してアイスク リームの生産は 減少の傾向にあ ることが知 られ る.す なわち昭和40年 の 生産量は前年比72.7%,昭 和41年 は前年比88.5%と なっ ている.し か しなが ら,こ れ は昭和39年5月27日 付厚生 省令第23号 に より,"乳 お よび乳製 品の成分規格 に関す る省令(以 下,「 乳等省令」 と略す)"もが一 部改正され, アイスク リームの成分規格お よび標示事項な らびに試験 法の一部が改め られ,6か 月の猶予期間をおいて実施 さ れたためで あって,ア イス ク リームおよび関連製 品の全 消費量が減少 した ものではないと考え られ る.す なわち 「乳等省令」において アイス ク リームは 乳製 品ではな く 乳等を主要成分 とする食品 として取 り扱われていること
