In recent years, due to the greater concern of science and society for the environment, there has been an increase in the number of studies aimed at the use of agro-industrial waste as a way of using it to generate products with high added value. There are different types of waste generated by industries, such as tanneries, sugar and alcohol, slaughterhouses, raise animal, food, cellulose and paper. The low cost of this type of raw material allows the development of economically competitive and ecological processes. One of the ways of using agro-industrial residues is through the solid state fermentation process, since the physical-chemical nature of these substrates facilitates colonization by microorganisms. There is a great advance in research in this field, especially due to the solution of environmental problems and attempts to reduce the costs of bioprocesses. The objective of this work was to carry out a brief review on the use of agro-industrial residues to obtain biotechnological products with high added value and their contribution to the sustainability of the planet.
