膨化食品の断面を紙にプリント(プリント法),または写真に撮って(写真法),これを画像解析して気泡の分布(すだち)を測定することを試みた.(1) 塩類あるいは発酵時間を変えて調製したパンのすだちを紙にプリントしたものから,手計算及び画像解析により気泡数を計測した結果,両方法間に有意な相関性が得られた.(2) パンの気泡数に対するプリント法と写真法による画像解析結果は良好な相関関係を示した.(3) パンの断面を写真法によって画像解析すると,比容積及び気泡の面積率と気泡数は負の相関性を,比容積と気泡の面積率は正の相関性を示したが,気泡数と気泡のHeywood diameterの間には相関性が見られなかった.(4) バター含量を変えてスポンジケーキを調製し,その断面のすだちを写真法によって画像解析したところ,気泡数と比容積の間には負の相関性が,比容積と気泡の面積率の間及び気泡のHeywood diameterの間に高い正の相関性が見られた.これらの結果から,膨化食品のすだちの研究において,試料の切断面を画像として取り込みコンピューターにより直接解析する方法は,操作が敏速で便利なことから大変有効であることが確認された.
