前報の早生温州ミカン果汁に続き,オレンジ果汁香気成分の加熱処理による変化を検討した.供試果汁は,ハムリン,パインアップル,バレンシアオレンジの3種類と普通温州果汁である.1. 温州ミカンの生果汁では検出されず,加熱によって生成する成分はβ-テルピネオールおよびβ-ダマセノンであったが,オレンジ果汁では3品種ともこれらの成分は認められなかった.2. オレンジ果汁では, d-リモネン,リナロール,オクタナール,エチルブチレートなどの炭化水素,アルコール,アルデヒドおよびエステル類の主要成分は減少し,一方α-テルピネオールは増加した.温州ミカン果汁でのみ増加した成分は, 2-メチル-3-ブテン-2-オールおよび3-メチル-2-ブテノールであった.これら諸成分の変化について,オレンジ果汁は温州ミカン果汁に比べ変化の程度が少なかった.
