The increased incidence of degenerative and malignant diseases observed in Western countries in recent years has been attributed, in part, to changes in dietary habits. During the past century, the production and consumption of refined carbohydrates have apparently increased more than 100%. Today, more animal and less vegetable protein is consumed. Less bread and other cereal foods are eaten, and most of these foods are prepared from lowextraction flour. Although some investigators have postulated that increased consumption of refined carbohydrates is the principal factor in the high prevalence of degenerative diseases in Western countries, BURKITT1) attached the principal blame to the widespread consumption of foods low in dietary fiber. BURKITT1) found a correlation between cancer of the colon and low-fiber diets in various regions of the world. BURKITT2) also related the development of hemorrhoids to inadequate food fiber in the diet. There is also an attempt to relate appendicitis and diabetes to insufficient food fiber. PAINTER3) related insufficient cereal fiber in the diet to the devolopment of diverticular disease. Some scientists have hypothesized that high-fiber diets reduce the risk of coronary heart disease. Support of this theory comes from controlled studies with high-fiber diets containing pectins, gums, and mucilages4). These components are found principally in plant cell walls. Cell walls of all higher plants are essentially a network of cellulose fibers embedded in a continuous matrix of hemicellulose and other polymers such as lignin. The cell wall matrix of corn pericarp is composed of a hemicellulose consisting mainly of xylose and arabinose with smaller quantities of galactose and glucuronic acid. Corn germ wall is of similar composition to pericarp. Cell walls of both tissues are nearly one-third cellulose and two-thirds hemicellulose. Ordinary yellow dent corn has one layer of aleurone cells. However, WOLF et al.5) found a South American race of floury maize that contained two to six layers of aleurone cells. This finding is important because it opens the possibility of genetically increasing the proportion of aleurone tissue or other cellular structures in corn. Genetics also plays an important part in the thickness of the pericarp tissue. This tissue is made up largely of thick cell walls6), the cell content having been resorbed. The large hemicellulose content of the pericarp is responsible for its marked swelling in water. Much more science and nutrition research is needed on the dietary role of cereal fibers as well as on the fibers of other foods. Many cereal and oilseed products contain large quantities of dietary fiber which could be related to some of the observations mentioned earlier.
