高糖濃度の寒天ゼリーのゲルセット時の物性に及ぼす水アメと砂糖の配合比及び水分含量の影響を調べた。(1) ゼリーの破壊強度(G)は水分含量の少ないものほど,また,水アメ配合比の多いものほど,冷却過程のGの上昇が大きく,かつ長く続き,最終的に大きな値を示した。(2) 破壊強度/歪は冷却初期の変化が著しく,水アメ配合比の多い,水分の少ないゼリーほど変化が大きかった。(3) 試料破壊後の荷重の低下値(BD)は各ゼリー共冷却時間が長くなるにつれ大きくなり,中でも水分 2527%程度のゼリーの上昇率は大きかった。また, BD/Gの値は水アメだけのゼリーの値が非常に小さく,砂糖を含むゼリーにおいては水分含量が多くなるほど値が高くなった。
