水道水を原水として隔膜電解槽で電気分解して得られた電解水で希釈した含水エタノールで桑葉成分の抽出について検討を行い以下の結果を得た1DNJの抽出量は酸性電解水pH 4で水道水に対して3程増加したがα-グルコシダーゼ阻害活性は酸性電解水pH 4pH 5共に10高い活性を示した2DPPHラジカル消去能は酸性電解水アルカリ性電解水共に原水に対して増加しその増加量は電解強度に比例していた.
