うどんの物性に及ぼす海洋深層水の影響 (DSW) を検討した.(1) DSW及びDSWの代わりに2.5%食塩水を小麦粉 (麺用中力粉) 1kgに対し, 390ml添加して2種類のうどんを調製し, 物性測定とN-SEM観察を行ったところ, 物性では, DSW添加うどんの方が, 食塩水添加うどんに比べ強度, 伸び共に高い値を示した. N-SEM観察では, 食塩水添加うどんに比べ, DSW添加うどんの組織構が密であった.(2) 2.5%食塩水にDSWに含まれる主要陽イオン (Mg2+, Ca2+, K+) を加えてうどんを調製したところ, Ca2+とK+をともに加えたうどんで, 強度及び伸びともにDSW添加うどんに匹敵した.以上の結果より, DSWはうどんの微細構造を密にすることにより, 物性の向上に寄与し, その効果は, 海水中に含まれる主要な元素, 特にCa2+とK+に由来するもの推察した.
