植物素材を凍結後,酵素液に浸漬し,減圧することにより植物組織内部に急速に酵素を含浸する方法を考案した.本法によって短時間で植物素材を軟化,単細胞化することができた.本法および攪拌法で得られた単細胞のβ-カロテンとアントシアニンの残存率および香気成分について比較した結果,本法で得られた単細胞は攪拌法に比べ,β-カロテンおよびアントシアニンの残存率は高く,香気成分の安定性も高いことが明らかとなった.また,任意の硬さを保持した食品素材の調製も可能で新しい食品素材の開発技術として有用性は極めて高い.
