低アミロース米の3品種を基本とした業務用ブレンドについて検討し,以下の知見が得られた.(1) 炊飯米の官能検査では,ミルキークィーンおよびスノーパールの20%ブレンドに適性が認められた.(2) 官能検査の変動範囲および官能検査の総合評価との相関関係から,ブレンド米の評価に利用できる項目として,硬さを設定した.(3) 低アミロースブレンドの官能検査の総合評価を目的変数,硬さに関わる項目を説明変数として重回帰分析を行い,重回帰モデルを作成した.(4) 重回帰式で用いた変数について主成分分析行い,主成分負荷量および主成分得点により,官能検査総合の評価水準別に,低アミロースブレンド米の分類を示した.
