(1) 茶期間のpH比較では,生葉全体である一心四葉で比較すると,一番茶より二番茶で低いことが明らかとなったが,二番茶と三番茶には差は認められなかった.この傾向は,第二葉から第四葉での各比較においても同様であった.葉位間のpH比較では,下位にある葉ほど低くなる傾向にあり,中でも越冬葉は最も低い値を示した.(2) 荒茶でのpHは品種によらず,また,露地栽培,被覆栽培の違いによらず,二番茶において一番茶より0.2∼0.3低いことが明らかとなった.(3) 荒茶のPhy変化率は,品種によらず,また露地栽培,被覆栽培の違いによらず,二番茶において一番茶より9∼18%も高いことが明らかとなった.(4) pHとPhy変化率との間には負の相関のあることが認められ,二番茶ほどpHが低く,Phy変化率が大きくなることから,結果として変色がより大きくなることが示された.この相関は,露地栽培茶と被覆栽培茶に分けて求めたときに強くなることから,Phy変化率はpH等の生理的要因だけではなく,葉の物理的要因等も考慮すべきことが示唆された.
