ダチョウ卵の形状,卵構成,濃厚卵白率,卵黄係数,pH,成分分析,テクスチャーについて検討し,白色レグホーン種鶏卵と比較した.(1) ダチョウ卵は,形状が丸く,鶏卵の20個分に相当する大きさであった.卵殻が厚く,卵殻比が大きく,卵白が卵黄に対して多かった.卵黄の品質を示す卵黄係数は0.17と低く,卵から卵黄を分離すること自身が難しいので,卵黄係数を用いることは難しい.また,濃厚卵白率も個体差が大きく,品質・鮮度判別方法には利用しがたい.(2) ダチョウ卵の一般成分には鶏卵と大差がなかったが,卵白及び卵黄の電気泳動パターンは,ニワトリ卵とは異なるパターンがみられた.ダチョウ卵の卵白の物理的特性では付着性が大きかった.
