SIおよび7Sを含有した牛乳カードの破断試験とそれらのカードから得られたチーズの切断試験を行った.破断試験では,軟らかさはコントロール SI添加>7S添加の順であった.切断試験では,強度,切断強度および切断エネルギーの全てがコントロール>SI添加>7S添加の順であった.このことからSIや7Sを添加したカードおよびチーズの物性は,添加したSIや7Sのゲル形成性に大きく影響を受けると考えられた.本研究の遂行に当たり,絶大なる御協力を賜りました酪農学園大学加藤勲教授に感謝いたします.
