米の粉体試料は加熱により急速に糊化することから,澱粉糊化時間を短縮することにより,ビスコグラフによる粘度測定を迅速化し得る可能性がある.この試験では,既存の機器を用いた迅速な測定方法について実験を行うと共に,多数試料の分析に対するその有効性を考察した.1.加熱・冷却を毎分3°Cに設定することにより,測定時間を1点あたり47分と慣行法の約半分に短縮し,1日約8点の試料を測定することができた.2.迅速法による測定の再現性は,変動係数で1∼2%であり,慣行法と同等以上のものが得られた.また,各特性値共,慣行法の数値と高い相関が見られ,十分に代替できることがわかった.3.迅速法による測定値は,食感の硬い方向へ変化しており,また項目により慣行法との数値の差が大きいため,各々別々の方法による測定,比較が必要である.4.ビスコグラム特性値相互の相関関係は,米の種類により異なる場合があり,冷却時要素の評価にはこれらを実測する必要がある.これらの結果から,迅速法では,現有のビスコグラフを用いて慣行法と同等以上の精度で粘度測定が可能であり,多数試料の分析に適用できるものと考えられる.
