サツマイモの調理後黒変の抑制するために,クロロゲン酸を分解する酵素の利用について検討した.(1) クロロゲン酸エステラーゼを調理後黒変の激しいベニオトメとベニハヤトに添加した結果,調理後黒変を抑制できた.(2) 酵素処理によりサツマイモペースト中のクロロゲン酸類はカフェー酸とキナ酸に分解された.分解速度はクロロゲン酸がイソクロロゲン酸より速く,またイソクロロゲン酸の中では3,5diCQAの分解が最も遅かった.(3) クロロゲン酸エステラーゼのクロロゲン酸類に対する基質特異性を検討した結果,クロロゲン酸の異性体である4CQAと5CQAが最も速く分解された.(4) クロロゲン酸エステラーゼが調理後黒変を抑制した要因として,この酵素がクロロゲン酸類を鉄イオンとの反応性の弱いカフェー酸とキナ酸に分解し,鉄イオンと反応した黒変物質の生成を抑制していることが考えられた.さらに,この酵素に不純物酵素として含まれいるペクチナーゼも酸性化を促す効果により黒変の抑制を補完しているものと推定した.
