(1) 顕微鏡観察用の試料を作成する時,カバーグラスを用いると分散粒子が崩壊または変形してしまい,粒子径測定に用いることが不適切であることが分かった.また,カバーグラスを使用しなくても,顕微鏡観察可能な試料を得ることができたため,W/O乳化物の分散粒子の観察にはカバーグラスを用いないこととした.(2) 低脂肪スプレッドの分散粒子は,室温では解析不可能であった.しかし,顕微鏡用加熱冷却装置を用いることにより,測定温度を制御した結果,40℃での測定が適切であることが解かった.(3) 低脂肪スプレッドを希釈分散する油に親油性乳化剤(ポリグリセリン縮合リシノレート)を添加すると,分散粒子の崩壊が無くなり,粒子径の測定に用いることの出来る試料となった.(4) 本方法により,簡便に分散粒子径および分布の概要を評価できるようになり,W/Oスプレッドの品質の適切な評価が可能となった.
