油脂(油相)を含浸処理した親水性多孔質ガラス膜を使用した膜乳化法によるW/O食品エマルションの調製において,膜細孔径,分散相濃度,乳化剤濃度,連続相撹拌速度などの乳化条件を変えてエマルションを調製し,膜細孔径と分散粒子径の関係,エマルションの単分散性に影響を及ぼす因子などについて検討した.(1) 油相を予め含浸処理した親水膜を使用して長時間乳化しても,膜表面での分散相による濡れを起こさずに単分散エマルションの調製が可能であった.(2) 油脂にトウモロコシ油を,乳化剤にポリグリセリン縮合リシノレートを,水相に食塩水を用いて膜細孔径を各種変えて単分散W/Oエマルションを調製した.その結果,平均分散粒子径(Dp)と膜平均細孔径(Dm)は直線関係にあった.(3) 油相に添加する乳化剤(PGPR)の濃度が5%以上のとき単分散エマルションが得られDpは一定であった.乳化剤濃度が5%未満のときはエマルションは多分散となりDpは大きくなった.(4) 乳化容器回転速度(R)を250550 min-1で変えるとDpは単分散を保ちつつ変化し,Rを大きくするとDpは小さくなった.(5) 油相を含浸処理した親水膜と疎水化膜を使用して乳化を行い,乳化臨界圧力(Pc)と乳化速度(Je)を比較した.油相を含浸させた親水膜を使用した場合は疎水化膜を使用した時に比べ,等しいDmでPcは1/31/2となり,Jeは1020倍となった.
