しば潰の酸味や色などの熟成に関与する乳酸菌の役割を検討するため,京都の洛北大原の地で漬けたしば漬を採取し,漬け込み後1日から5日,20日,30日,40日までの各5段階の試料から分離した乳酸菌について形態的および生理的諸性質によって同定を行った.全期間を通してL. brevisが共通にみられ,漬け込み1日にはL. curvatusおよびLeuc. mesenteroidesが現れ,5日から30日まではL. plantarumが優勢であったが,発酵後期の40日になるとL. plantarumは減少し,L.casei subsp. pseudoplantarumが優勢となった.ホモ発酵型乳酸菌が83%を占めた20日には,しば漬の色調は特有の鮮やかな赤紫色に安定し,pHは3.2,酸度(乳酸として)は2.1%であった.しば漬製造には,主要乳酸菌のうち特にL. plantarumが20日までに十分生育し,本菌が生成する乳酸が一定以上の酸度に高まることが必要であり,酸味成分の賦与と共に特有の色調形成のためにも重要であることが本研究によって初めて明らかにされた.
