(1) 4種類の荒茶より,従来の熱風乾燥処理およびマイクロ波加熱処理による火入れ再製工程を施した,それぞれ2種類の製茶(煎茶)計8種を調製した.(2) 各煎茶浸出液の香気成分組成を比較した結果,マイクロ波加熱処理では,熱風乾燥に比べ,火香と言われる香ばしい香気に寄与するピラジン類やピロール類の生成が顕著に抑制されることが明らかとなった.(3) 各煎茶の,苦味や渋味に主として関与するカフェインおよび5種のカテキン類,(+)-カテキン,(-)-エピカテキン,(-)-エピガロカテキン,(-)-エピカテキンガレート,(-)-エピガロカテキンガレートの浸出量および茶葉総含有量を定量し,さらにその結果より浸出率を求めた.マイクロ波処理した茶は熱風乾燥した茶に比べ,いずれの茶葉においてもカフェインの浸出量が有意に低く,またエピカテキンガレート.エピガロカテキンガレートについても浸出率が有意に低い傾向が認あられた.
