加熱調理は食材を柔らかくして固いものや難消化性の ものを食べられるようにしたり,殺菌により安全性を高 めたり,保存性を向上させたりする作用があり,人類の 生存にとってなくてはならない技術である。また,食欲 をそそる好ましい香りや色を生じさせ,食の楽しみを増 強させてくれる効果もある。しかし,加熱加工・調理時 に食材の成分が反応を起こして有害物質を生成する場合 があり,アミノ酸の一種であるアスパラギンがフルク トースやグルコースなどの還元糖と反応して生じる発が ん物質のアクリルアミドがその例である (図 1)。ア クリルアミドは,煮たりゆでたりの調理ではほとんど生 成しないが,100°Cを超える油で揚げたりオーブンで焼 いたりしたときに,メイラード反応生成物の一つとして 生成する。 経口摂取されたアクリルアミドは,グルタチオン抱合 を受けて尿中に排出されるが,一部が酸化酵素により二 重結合がエポキシ化された代謝物グリシドアミドとなっ て,DNAに結合することがその発がん性,遺伝毒性, 高温加熱加工・調理で小麦製品等に生じるリスク ─発がん物質アクリルアミド─ 吉田 充 (日本獣医生命科学大学応用生命科学部食品科学科)
