咀嚼嚥下困難者における嚥下ソフト食導入による栄養状態の改善について, 身体特性並びに血液性状の変化の両面から検討した。  嚥下ソフト食は, きざみ食, ミキサー食対応高齢者の栄養状態を保つ有効な食事形態である。嚥下ソフト食は, 箸を使って安全で美味しい食事を口から食べるという人間としての基本的な欲求を満たすことができる。本研究において以下のことが明らかになった。  (1) 嚥下ソフト食喫食者は普通食喫食者と比較し, 介護度,寝たきり度および認知度が高く, BMIは低かった。  (2) 嚥下ソフト食喫食者の血清アルブミン値は3.8±0.3g/dlで, 普通食喫食者と同程度の栄養状態であることが認められた。  (3) 嚥下ソフト食は,喫食率が高く,喫食者は目標栄養量を確保していた。  (4) 嚥下ソフト食喫食者の身体状況, 血液性状に経年変化はなく栄養状態は維持されていた。  以上, 嚥下ソフト食喫食者の咀嚼・嚥下力は, きざみ食およびミキサー食レベルと対応しており, 栄養の維持.改善さらには生活機能の維持・向上に適した食事形態であるといえる。
