The application of specific antibodies to the detection, estimation and isolation of different molecules in foods or biological fluids is revolutionizing food chemical and biological research. Such specific antibodies have usually been prepared from sera of a variety of immunized mammals. The response to antigenic stimuli is also highly developed in fowls as well as in mammals. Recently, some investigators 3,5,9) have reported that serum antibodies of hyperimmunized chickens were efficiently transported and accumulated in the egg yolk. High levels of specific antibody activity in egg yolks were maintained for several months by periodic immunization, and an active antibody in the egg yolk was easily isolated. Hence, the chicken egg yolk antibody (IgY) is considered to be an efficient source of specific antibody to be used as a reagent for the detection, estimation and isolation of different molecules in food and biological fluids. However, it must be taken into consideration that there are some disadvantages as well as many advantages when chicken specific IgY is prepared and used instead of mammalian IgG5). One of the disadvantages is that the immune response to protein immunogen with a molecular weight of less than 30,000 is poor in chickens7). Therefore, it is necessary to modify the immunogen with higher molecular protein such as keyhole limpet hemocyanin and with chemical reagents 1,4) or to repeat periodical injections6) when the immunogen is a low molecular protein. On the other hand, Japanese quails are bred widely for egg production as well as chickens . Some lines of Japanese quails may possess a high immune response to proteins not only with high molecular weight but also with low molecular weight. There are no reports , however, on the production of specific IgY in Japanese quails.
