Insoluble collagen has been used as a main source of collagen industry. However the structural stability of insoluble collagen has not been sufficiently elucidated yet. The authors studied the structural features and the thermal stability of intact collagen of pigskin and collagen fibrils reconstituted from soluble collagen solution, then recognized that intact collagen was composed of a heterogenous structure with different thermal stabilities1). We recognized also that intact collagen indicated a multi-stage denaturation process2) and that the thermal structural-stability depended on the macrostructure of fibril aggregates reconstituted from the solution3). The present paper describes the thermal behavior of collagen fibers of varying fiber diameters prepared by mechanically dispersing pigskin corium.
