解凍したすり身に 10150% の水を加え3%NaCl と塩ずりし25℃ で予備加熱後 90℃ で 30 分加熱した。加熱ゲルの破断強度BSと破断凹みbsを測りGs=BS/bs を求め予備加熱時間との関わりを調べた。結果は() BS と Gs の最大値はタンパク質濃度の増加に伴い指数関数的に増加するがbs の増加は同じでなかった。しかしこれらの値は 2 級<2 級(特)<A 級<SA 級からのゲルの順に高かった。()濃度が 717% の間の二段加熱ゲルでは BS と Gs の最大値の間に高い正の相関がありその関係直線と勾配はすり身の等級で異なった。
