高シュクロース含有齲蝕誘発性飼料 (Diet 2000) がラット顎下腺唾液ペプチドの分泌に及ぼす影響を調べた。7週間Diet 2000で飼育したラットは通常の紛末飼料で飼育した対照ラットに比べて著しく臼歯裂溝部の齲蝕スコアが増加した。またその時, イソロプロテレノール (IPR) 刺激によって採取した顎下腺唾液中には数10種のペプチドが存在していたが, その内の5種類のペプチド (P21, P24, P26, P28, P34) が対照に比べて著明に増量した。しかしオクトパミン刺激唾液にはペプチド成分の量的変化は認められなかった。P21, P24, P28はアミノ酸配列が順にK-L-L-A-R, K-L-L-A-R-S-P-L-G-R, P-P-S-A-D-A-D-A-E-N-V-Q-E-G-E-S-A-P-PAのペプチドであり, それらはラット顎下腺唾液タンパク質であるGlx-richproteinsのC末端およびN末端域の断片ペプチドに相当した。この断片化は顎下腺顆粒管細胞に局在するプロテアーゼによるものと思われ, 唾液タンパク質の生合成後に分泌の過程で分解されたものと考えられる。
