Well-known experiments have been conducted by Chittenden dealing with the protein intake and nitrogen output of college students and faculty members. To a large extent this was done by securing daily urinary nitrogen figures, indicating nitrogen metabolized. These figures served as index of nitrogen or protein consumed, since 90 per cent of nitrogen injected by the adult will be digested, used and eliminated in the urine. More recently similar investigations have been carried out with college men, students in medical schools in the South and East as subjects and also with college women at the University of Illinois.
