Many regions in the world are poor in soil selenium (Se) content, which in turn, resulted in inadequate selenium levels in forages and crops. Furthermore, under south Sinai conditions of the high salinity of water irrigation, growing plants aren’t capable of maintaining their needs of selenium from the poor soil (Mikkelsen et al., 1988 and Sadek, 1995). Subsequently, selenium supplementation is used to enhance dietary utilization (Ceballos et al., 2009). Selenium (Se) plays essential roles in several metabolic processes, including antioxidant defense systems, thyroid hormone metabolism, and immune function (Brown and Arthur, 2001). Selenium is an essential component of glutathione peroxidase, an enzyme involved in detoxification of hydrogen peroxide and lipid hydroperoxides. Selenium has also been shown to improve immune responses (Sheffy, 1979) as it is required for the development and expression of non– specific humeral and cell-mediated immune responses.
