From August 2010 to July 2011, 32 dairy farms from Garanhuns-PE micro region, categorized by production (1-250L/day; 251-500L/day and>500L/day) were visited to evaluate the microbiological, physicchemical and cellular quality of refrigerated raw milk, as well as possible association with as milking procedure and the microbiological water quality used to this procedures. For this, raw milk sample were collected from expansion tanks and water from reservoir tanks and a evaluation of milking procedures was accomplished. The total bacterial count (TBC), somatic cell count (SCC), fat, protein and total solids to milk sample and the presence of total coliform and thermotolerant coliforms to water sample were evaluated. The average values of SCC and TBC was 5.9 x 10 5 cells/ml and 6.1 x 10 5 UFC/ml, respectively. The TBC was associated (p<0.05) with the washing of milking equipment. Of all 32 water samples analyzed, 78.1% were positive to TC of which, 56.2% positive to FC. Of all 32 samples from refrigerated raw milk analyzed, 65.6% were outside of the standard established in Normative Instruction 62 of 2011 from MAPA, of which 43.7% to SCC 21.87% to TBC. Specific works are necessary to orientation of dairy farmers about the hygiene and sanitary management importance of milking and the water treatment used for this purpose, with a view to improving of the milk quality produced in the micro region of Garanhuns-PE.
