最近緑茶などに多く含まれるカテキン類が優れた抗酸化作用を示すことで注目されているしかしカテキン類の酸化過程については十分に明らかにされていないマイクロ流量の電解フローセルとエレクトロスプレーイオン化質量分析計をオンラインで組み合わせたelectrochemistry/electrospray ionization mass spectrometryEC/ESI-MS法を用いることで電気化学的酸化によるカテキン類の反応生成物を調べた()-epicatechin gallate()-epigallocatechin()-epigallocatechin gallateでは酸化生成物の2量体に関連したピークが検出された抗酸化物の酸化過程の研究においてEC/ESI-MS法が有効な手段であることを確認できた
