β-galactosidase (β-D-galactosidegalacto hydrolase, E.C.3.2.1.23, trivially lactase) is a enzyme that hydrolyze the lactose and it is an important enzyme that has been long accepted for dairy industry. One of the glycosidases, is β-galactosidase enzyme that are mostly produced by lactobacilli and widely used in dairy industry. The study of β-galactosidase production from different microorganisms is not new but many of these microbes have not been approved for industrial use because not being recognized as food grade microorganisms by WHO.
