Background: An experimental study was conducted on development of rich nutrient bar from seasonally available local fruits of Assam. Method: A survey was conducted on the local market of Assam to see the different seasonally available fruits in the market. Among the available fruits, orange; grapes and olive were selected for formulation of the nutrient bars. Fiber rich dry ingredients such as rice flakes, almond, raisin, cashew nut, dates were procured from local markets of Guwahati, Assam. The nutrient bars were developed by trial and error method and an organoleptic evaluation was done for its acceptability. Results: The nutrient bars were developed with six variations viz., A1 (orange crunchy bar), A2 (orange soft bar), B1 (grapes crunchy bar), B2 (grapes soft bar), C1 (olive crunchy bar) and C2 (olive soft bar). The organoleptic evaluation of the products were done for the attributes including appearance, colour, texture, taste and flavour for a period of 0-15 days from formulation. Conclusion: From the overall result of organoleptic evaluation, it was found that the product A2 was more acceptable in terms of all attributes both by the students and consumers.
