FoodSci.,28:564-571. Theuseofcleanedandcutfreshvegetablesfordirectconsumptionwithoutcookingislimitedbytheshortshelflife causedbythefastgrowthofcontaminatingmicroflora. Withtheaimofreducingthecontamination,wetestedthe possibleuseofperoxyaceticacid (brandnamePersteril)asanadditive. Peroxyaceticacidbreaksdownquicklyinto oxygenandaceticacid; withthelatterquicklyvaporisingthroughthepackaging. Testswerecarriedoutonamodelof pre-washed, cut, andre-washedcarrots,whichwereleftnaturallycontaminatedtoresemblerealgrocerystorecondi - tions. Fourdecontaminationregimenswereapplied: (1)rinsingwithordinarytap (drinking) water, (2)rinsingwith a0.2%solutionofPersteril,(3)rinsingwitha0.2%solutionofPersteril+theadditionofconcentratedPersterilinto thepackagingbeforesealing,and(4)rinsingwitha0.2%solutionofPersteril+theadditionofconcentratedPersteril intothepackagingbeforesealing+anotheradditionofconcentratedPersterilafter24hours. Thetotalnumberof aerobemesophilicmicroorganisms (TNM)andthenumbersofyeastsandmoldsweremonitoredinthesamplestaken during 28-daysofstorage.  ThelastdecontaminationregimenreducedtheinitialcontaminationbyTNMbyabout 1× 10 4 CFU/gor 4 logunitsandnofurthermicrobialgrowthwasobservedduringstorage.  Yeastsandmoldswere reducedbyabout 3.16× 10 3 CFU/gor3.5logunits. Nostatisticallysignificantchangesincolour,textureortastewere notedduringstorage. Therewasaslightchangeimmediatelyaftertheapplicationintheodourofsamplestreatedwith concentratedPersteril;however, theodourreturnedtooriginallevelsduringstorage.
