Ascientificshelf-lifestudyforListeria monocytogenes inthetypicalSlovakcheese "bryndza" wasperformedinaccord - ancewiththerequirementsoftheCommissionRegulation (EC)2073/2005.Basedonthepreviouspositivefindingsof L. monocytogenesinthefinalproducts, theproducerdecidedtoperformlaboratorytests, theresultsofwhichwould allowhimadifferentevaluationofthesepositiveresults. Boththephysico-chemical (pH,a w )andmicrobiologicalex - aminationsof"bryndza" cheesestoredat 5.8-6.2°Cwereperformedeverytwodaystilltheendoftheproductshelf-life (7days). Microbiologicalanalyseswereperformedafterartificialcontaminationofthefinalproductwithamixtureof threeL. monocytogenesstrains. ThegrowthpotentialofL.monocytogeneswascalculatedasthedifferenceinthecounts ofthisbacteriumbetweenthelastdayandthefirstdayofthetest. TheSlovaktraditional "bryndza" cheesehasbeen foundnottosupportthegrowthofL.monocytogenes .Thus,thecountsofL. monocytogenesmustnotexceed 50CFU/g atthebeginningand20CFU/gattheendoftheproductshelf-lifeinordertoensureitssafetyfortheconsumer.
