Von den ca. 80 im Bananenaroma von uns gefundenen Estern weisen ca. 40 Methylverzweigungen auf. Diese werden strukturell von Leucin und Valin abgeleitet, was durch Zufuhr von  14 C-mar-kiertem Leucin und Valin bei Bananenscheibchen nachgewiesen werden konnte.
