Cells of tissues and organs are constantly exposed to oxidative stress and free radicals every day. Normal cells respond by using antioxidant enzymes such as glutathione (GSH), vitamins C and E, catalase, superoxide dismutase. Sophisticated DNA repair mechanisms are also used. If the balance between the production of free radicals and the defense mechanisms of cells is broken, the human body is exposed to oxidative stress. Oxidative stress causes chronic diseases such as cancer, diabetes, neurodegenerative diseases and cardiovascular disease. To overcome this, many studies have been done on the antioxidant effects of natural products. Long-term intake of antioxidant-rich foods may delay or avoid the development of related diseases.
