Olive tree has been the protagonist of several local development strategies throughout centuries. This millennial tree has been cultivated in Persia and Mesopotamia since 8000 years ago. Various Mediterranean civilizations expanded the olive cultivation: Phoenician, Phocaea, Greek, Hebraic, Carthaginian, Roman, Arab, Spanish or French. Olive allowed economic growth, stabilized nomadic populations, ensured a part of the social welfare... it has been cultivated for different purposes, included political ones. As a result, we have inherited a cultural patrimony that we can discover through cultural itineraries, museums, interpretation centers... Our ancestors showed astounding adaptations to their surrounding environment. They materialized it in some of the singular heritages that have created such us troglodyte traditional olive oil press in Matmata (Tunisia). However, the lack of use of other heritage elements provoked the pity disappearance. Nowadays, innovations, technologies developments, consumers preferences... represent crucial factors to select the strategy that should be adopted in order to reach the local development. As an example, we will demonstrate how important is the olive tourism for the long term local economic growth of towns typically based in the olive industry.
